Roasted Veggie Alfredo Flatbreads

4 flatbreads (store-bought or homemade)

1 cup Alfredo sauce (store-bought or homemade)

1 zucchini, thinly sliced

1 bell pepper (any color), thinly sliced

1 cup cherry tomatoes, halved

1 small red onion, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, combine the zucchini, bell pepper, cherry tomatoes, and red onion. Drizzle with olive oil, and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss until the veggies are well coated.

      Roast Veggies: Spread the seasoned vegetables evenly on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.

        Prepare Flatbreads: While the veggies are roasting, place the flatbreads on another baking sheet. Spoon a generous amount of Alfredo sauce over each flatbread, spreading it evenly to the edges.

          Add Cheese: Sprinkle shredded mozzarella cheese evenly over each flatbread.

            Top with Veggies: Once the veggies are done roasting, remove them from the oven and distribute them evenly over the cheesy Alfredo flatbreads.

              Bake Flatbreads: Place the flatbreads in the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove the flatbreads from the oven. Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired. Slice and serve hot!
