1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup broccoli florets

1 cup baby carrots, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Hummus or tzatziki for dipping

Instructions
 

Preheat the oven: Start by preheating your oven to 425°F (220°C).

    Prepare the veggies: In a large mixing bowl, combine the cherry tomatoes, zucchini, red and yellow bell peppers, broccoli, and baby carrots.

      Season the veggies: Drizzle the olive oil over the vegetables. Sprinkle the garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until the veggies are well-coated in the oil and seasonings.

        Spread on a baking sheet: Arrange the seasoned vegetables evenly on a large baking sheet lined with parchment paper, ensuring that they are spaced out to promote even roasting.

          Roast the veggies: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through for even cooking.

            Prepare snack packs: Once the veggies are out of the oven and slightly cooled, divide them into small containers or snack bags.

              Garnish: Sprinkle freshly chopped parsley over each pack for a burst of flavor and color.

                Add dipping options (optional): If desired, include a small container of hummus or tzatziki in each pack for a delicious and healthful dipping option.
