1 pound fresh salmon fillets, skin removed

1 tablespoon olive oil

Salt and pepper, to taste

1 head of butter lettuce or romaine, leaves separated and rinsed

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey

1 tablespoon balsamic vinegar

1 tablespoon soy sauce

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds (optional)

Fresh cilantro or mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberry Glaze: In a small saucepan over medium heat, combine sliced strawberries, honey, balsamic vinegar, soy sauce, and grated ginger. Cook, stirring occasionally, until the strawberries have softened and the mixture starts to thicken—about 10 minutes. Remove from heat and allow to cool slightly.

    Cook the Salmon: Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the skillet is hot, add the salmon and cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork and is opaque in the center. Remove from the skillet and let cool slightly.
