Savory Beef & Cabbage Soup

1 lb (450g) beef chuck, cut into 1-inch cubes

4 cups beef broth (or stock)

2 cups water

1 small head of green cabbage, chopped

2 large carrots, diced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

1 cup diced tomatoes (canned or fresh)

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef cubes and season them with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Aromatics: In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Build the Soup Base: Return the seared beef to the pot. Pour in the beef broth and water, scraping up any brown bits from the bottom of the pot. Add the chopped cabbage, diced carrots, diced tomatoes, Worcestershire sauce, dried thyme, smoked paprika, and bay leaf to the pot.

        Simmer: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the soup simmer for about 1 hour, or until the beef is tender and the flavors meld together. Stir occasionally.

          Final Seasoning: Remove the bay leaf and taste the soup. Adjust the seasoning with more salt, pepper, or Worcestershire sauce as desired.

            Serve: Ladle the hearty soup into bowls and garnish with freshly chopped parsley. Enjoy warm with crusty bread on the side!
