Ingredients

12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, casings removed)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Cook the Rigatoni: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage. Cook, breaking it apart with a spatula, until browned and cooked through (about 5-7 minutes). Remove excess grease if necessary.

Sauté the Vegetables: Add the diced onion and bell pepper to the skillet with the sausage. Sauté until the onion becomes translucent and the bell pepper softens (about 4-5 minutes). Stir in the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Cream: Pour the crushed tomatoes into the skillet, followed by the heavy cream. Stir to combine, then add oregano, basil, red pepper flakes, and season with salt and pepper. Allow the mixture to simmer for about 5-10 minutes, letting the flavors meld.

Combine Pasta and Sauce: Add the cooked rigatoni to the skillet, tossing to coat the pasta evenly with the sauce. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

Cheesy Finish: Stir in the grated Parmesan cheese until it melts into the sauce, creating a creamy, cheesy texture. Taste the dish and adjust seasoning as needed.

Serve and Garnish: Plate the Rigatoni, garnishing with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired. Serve hot and enjoy!
