1 loaf of day-old French bread, cut into 1-inch cubes (about 8 cups)

1 pound Italian sausage (mild or spicy, based on preference)

1 large yellow onion, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

4 cloves garlic, minced

8 large eggs

2 cups milk

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

    Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook until browned and no longer pink, breaking it into small pieces as it browns. Once cooked, remove it from the skillet and set aside, draining any excess fat.

      Sauté the Vegetables: In the same skillet, add the olive oil. Add the diced onion and bell peppers, cooking until they are softened (about 5-7 minutes). Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Season with salt, pepper, oregano, and basil. Remove from heat.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Add both the mozzarella and cheddar cheeses to the mixture, stirring to combine.

          Assemble the Strata: In the greased baking dish, layer half of the bread cubes on the bottom. Top with the cooked sausage, followed by the sautéed vegetable mixture. Pour half of the egg and cheese mixture over this layer. Add the remaining bread cubes and top with the rest of the egg mixture, ensuring everything is evenly soaked. Press down gently to compact the layers.

            Chill (optional): For an extra delicious flavor, cover the baking dish with plastic wrap and refrigerate for at least 30 minutes or overnight to let the flavors meld.

              Bake the Strata: Remove from refrigerator if chilled, and let it sit at room temperature for 15 minutes. Place in the preheated oven and bake uncovered for 40-45 minutes, or until the top is golden brown and the egg is set.

                Garnish and Serve: Once baked, let it cool for a few minutes before garnishing with fresh parsley. Cut into squares and serve warm.
