Savory Turkey and Spinach Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked quinoa or rice

2 cups fresh spinach, chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup shredded mozzarella cheese

1 can (14.5 oz) diced tomatoes, drained

2 tablespoons olive oil

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush or spray the outside with olive oil. Place them upright in a baking dish.

      Cook the Turkey Mixture: In a large skillet over medium-high heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional minute.

        Add Ground Turkey: Add the ground turkey to the skillet. Cook until it is browned and cooked through, breaking it apart with a wooden spoon (about 5-7 minutes).

          Mix in Ingredients: To the turkey, stir in the cooked quinoa or rice, chopped spinach, diced tomatoes, Italian seasoning, smoked paprika, salt, and black pepper. Stir well until the spinach is wilted and everything is well combined. Remove from heat.

            Stuff the Peppers: Carefully spoon the turkey and spinach mixture into the empty bell peppers. Press down gently to pack the filling if necessary.

              Top with Cheese: Sprinkle the shredded mozzarella cheese generously on top of each stuffed pepper.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                  Serve: Allow the peppers to cool for a few minutes, then garnish with fresh basil or parsley, if desired. Serve warm and enjoy your delicious stuffed peppers!
