Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup shredded mozzarella cheese (plus extra for topping)

1 tablespoon olive oil

1 can (14.5 oz) diced tomatoes, drained

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Cook Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened.

        Add Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until it’s browned and no longer pink, about 5-7 minutes.

          Mix in Vegetables & Seasonings: Stir in the chopped spinach, cooked quinoa, drained diced tomatoes, oregano, paprika, salt, and black pepper. Cook for another 3-4 minutes until the spinach is wilted and everything is heated through.

            Add Cheese: Remove the skillet from heat and stir in the shredded mozzarella cheese, reserving a handful for topping.

              Stuff Peppers: Carefully fill each bell pepper with the turkey mixture, packing it down slightly. Sprinkle the reserved mozzarella cheese on top of each stuffed pepper.

                Bake: Pour a small amount of water (about ¼ cup) into the bottom of the baking dish to help steam the peppers. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and the peppers are tender.

                  Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
