Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

1 cup fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 teaspoon paprika

1 can (14.5 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish. If they wobble, you can slice a small amount off the bottom to make them stable.

      Make the filling: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic; sauté for about 3-4 minutes until the onion becomes translucent.

        Add turkey: To the skillet, add the ground turkey. Cook for about 7-10 minutes until browned and fully cooked, breaking it apart with a wooden spoon.

          Incorporate veggies & seasonings: Add the chopped spinach, cooked quinoa (or rice), drained diced tomatoes, dried herbs, and paprika to the skillet. Mix well and let the mixture cook for another 3-4 minutes until the spinach wilts. Season with salt and pepper to taste.

            Stuff the peppers: Remove the skillet from heat and stir in half of the shredded mozzarella. Spoon the turkey and spinach filling into each bell pepper, pressing down gently to pack it.

              Top with cheese: Once all peppers are stuffed, sprinkle the remaining mozzarella cheese on top of each pepper.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Serve: Remove from the oven and allow to cool for a few minutes. Garnish with freshly chopped parsley, if desired, then serve warm.
