Sheet Pan Lemon Herb Salmon and Asparagus

4 salmon fillets (6 oz each)

1 bunch asparagus (approximately 1 lb), trimmed

2 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon salt

½ teaspoon black pepper

Lemon slices (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, and black pepper until well combined.

      Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-top bag. Pour half of the marinade over the salmon, ensuring each piece is coated. Let it marinate for 15-30 minutes at room temperature. Reserve the other half of the marinade for the asparagus.

        Prepare the Asparagus: On a large sheet pan, lay out the trimmed asparagus. Drizzle the reserved marinade over the asparagus and toss to coat evenly.

          Arrange on the Sheet Pan: Move the asparagus to one side of the sheet pan, creating space for the salmon. Place the marinated salmon fillets on the other side of the sheet pan, skin-side down.

            Add Lemon Slices: Place lemon slices on top of each salmon fillet and in between the asparagus for added flavor and presentation.

              Bake: Transfer the sheet pan to the preheated oven. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender and bright green.

                Check Doneness: If desired, broil for the last 1-2 minutes for a crispier texture on the salmon (watch closely to avoid burning).

                  Serve: Remove from the oven and let it rest for a minute. Serve immediately, garnished with additional fresh herbs if desired.
