Ingredients
  

1 pound Italian sausage links (sweet or spicy, based on your preference)

2 cups baby potatoes, halved or quartered

2 cups bell peppers, chopped (any color)

1 medium red onion, sliced

2 cups zucchini, sliced into half-moons

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the halved baby potatoes, chopped bell peppers, sliced red onion, and sliced zucchini.

      Drizzle the olive oil over the veggies and sprinkle the garlic powder, onion powder, dried oregano, dried thyme, salt, and pepper. Toss everything together until the vegetables are well-coated.

        Spread the seasoned veggies evenly across a large sheet pan.

          Cut the Italian sausage links into 1-inch pieces and scatter them over the vegetables on the sheet pan.

            Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the veggies are tender and the sausage is cooked through, stirring halfway through for even cooking.

              Once finished, remove the pan from the oven and let it cool for a few minutes. Sprinkle with chopped fresh parsley for a pop of color and flavor.
