Shrimp Lettuce Wraps with Blueberry Glaze

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup soy sauce

1 tablespoon honey

1 cup fresh blueberries

1 teaspoon cornstarch dissolved in 1 tablespoon water

1 head of butter or romaine lettuce, leaves separated

1/2 cup shredded carrots

1/4 cup chopped green onions

1/4 cup chopped cilantro (optional)

Lime wedges for serving

Salt and pepper to taste

Prepare the Blueberry Glaze: In a small saucepan, combine the blueberries, soy sauce, honey, and garlic. Cook over medium heat until the blueberries start to break down, approximately 5 minutes.

    Thicken the Glaze: Stir in the cornstarch mixture and continue to cook for another 2-3 minutes until the sauce thickens. Remove from heat and set aside.

      Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, ginger, salt, and pepper. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes.

        Combine Shrimp and Glaze: Pour the blueberry glaze over the cooked shrimp in the skillet, stirring to coat the shrimp evenly. Allow to simmer for a minute to meld the flavors together.

          Assemble the Wraps: Take a lettuce leaf and fill it with a spoonful of the glazed shrimp, a sprinkle of shredded carrots, and green onions. Add cilantro if desired.

            Serve: Squeeze fresh lime juice over the top and serve immediately with extra glaze on the side for dipping.
