Skillet Cheesy Broccoli & Rice Bake

Ingredients
  

1 cup uncooked rice (long grain or jasmine)

2 cups vegetable broth or chicken broth

3 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup sour cream

1/2 cup milk

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the uncooked rice to the skillet, stirring it well with the onion and garlic for about 2 minutes to toast the rice slightly.

        Pour in the vegetable or chicken broth, and add the paprika, salt, and black pepper. Bring the mixture to a simmer.

          Once simmering, cover the skillet with a lid and reduce the heat to low. Cook for 15 minutes until the rice is tender, and most of the liquid is absorbed.

            While the rice is cooking, blanch the broccoli florets in boiling water for 2-3 minutes. Drain and set aside.

              After 15 minutes, remove the skillet from heat and stir in the blanched broccoli, sour cream, and milk until well combined.

                Fold in the shredded cheddar and mozzarella cheeses, mixing until everything is evenly combined.

                  Preheat your oven to 375°F (190°C).

                    Top the mixture in the skillet with grated Parmesan cheese.

                      Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden on top.
