Ingredients

1 pound boneless, skinless chicken breasts

8 ounces fettuccine pasta

2 cups heavy cream

1 cup grated Parmesan cheese

2 cups chicken broth

4 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon black pepper

½ teaspoon salt

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Additional Parmesan cheese (for serving)

Instructions

In a slow cooker, add the chicken breasts and season with salt, pepper, and Italian seasoning. Drizzle olive oil over the chicken.

Add minced garlic and chicken broth to the slow cooker, ensuring the chicken is mostly submerged.

Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and fully cooked (internal temperature should reach 165°F).

Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken back to the slow cooker.

Stir in the heavy cream and grated Parmesan cheese until fully combined.

Break the fettuccine in half and add it to the slow cooker, pushing it down into the creamy chicken mixture.

Cover and cook on high for an additional 30-40 minutes, or until the pasta is cooked al dente, stirring occasionally.

Once the pasta is cooked, mix everything together well. Adjust seasoning if needed.

Serve hot, garnished with chopped parsley and extra Parmesan cheese.
