Slow Cooker Lasagna Roll-Ups

12 lasagna noodles

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 egg

2 tbsp fresh basil, chopped (or 1 tbsp dried basil)

1 tsp garlic powder

2 cups marinara sauce (store-bought or homemade)

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

    Prepare the Cheese Filling: In a mixing bowl, combine the ricotta cheese, Parmesan cheese, 1 cup of the mozzarella cheese, egg, chopped basil, garlic powder, salt, and pepper. Mix until well combined.

      Assemble the Roll-Ups: Lay one lasagna noodle flat on a clean surface. Spread a generous amount of the cheese filling (about 2-3 tablespoons) evenly across the noodle. Roll the noodle up tightly, starting from one end. Repeat this process with the remaining noodles and filling.

        Layer in the Slow Cooker: Spread a thin layer of marinara sauce on the bottom of the slow cooker. Place the roll-ups seam-side down in the slow cooker, fitting them snugly. Pour the remaining marinara sauce over the top of the roll-ups, ensuring they are well coated. Sprinkle the remaining mozzarella cheese on top.

          Cook: Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours until the cheese is melted and bubbly.

            Serve: Once cooked, carefully serve the lasagna roll-ups on plates, spooning some of the marinara sauce from the slow cooker over the top. Garnish with fresh parsley if desired.
