Slow Cooker Shepherd’s Pie

For the meat filling:

1 lb (450g) ground lamb or beef

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

For the mashed potatoes:

2 lbs (900g) Yukon Gold potatoes, peeled and quartered

4 tablespoons unsalted butter

½ cup milk (or cream for richness)

Salt and pepper to taste

A sprinkle of paprika for garnish (optional)

Brown the Meat: In a skillet over medium heat, add the ground lamb or beef. Cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion, garlic, carrots, and celery to the skillet with the meat. Sauté for about 5 minutes until the onions are translucent and the vegetables start to soften.

      Combine Ingredients: Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, and season with salt and pepper. Let it simmer for a couple of minutes, then transfer the mixture to the slow cooker.

        Cook the Filling: Add the frozen peas to the slow cooker. Cover and cook on low for 6 hours or high for 3 hours until the mixture is flavorful and thickened.

          Prepare the Mashed Potatoes: About 30 minutes before the meat filling is done, place the quartered Yukon Gold potatoes in a large pot and cover with cold water. Bring to a boil and cook for about 15-20 minutes until fork-tender.

            Mash and Season: Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste.

              Assemble the Shepherd's Pie: Once the meat filling is done, transfer it to a large baking dish. Carefully spread the mashed potatoes over the top, smoothing the surface with a spatula.

                Garnish and Serve: If desired, sprinkle paprika over the mashed potatoes for color. Place the dish under the broiler for about 5-7 minutes, or until the top is slightly golden and crispy. Serve warm and enjoy your cozy dish!
