Slow Cooker Sweet Corn Chicken Chili

1 lb (450g) boneless, skinless chicken breasts or thighs

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) sweet corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

2 cups chicken broth

Juice of 1 lime

Fresh cilantro for garnish

Sour cream or Greek yogurt for serving (optional)

Shredded cheese for serving (optional)

Instructions
 

Prepare the Chicken: Place the chicken breasts or thighs at the bottom of the slow cooker. Season with salt, pepper, chili powder, cumin, and smoked paprika.

    Layer the Veggies: Add the diced onion, red bell pepper, and minced garlic on top of the chicken.

      Add the Beans and Corn: Pour in the black beans, kidney beans, and sweet corn. Gently mix to incorporate the vegetables with the beans.

        Tomatoes and Broth: Add the can of diced tomatoes (with juices) and pour in the chicken broth over all the ingredients.

          Cook It Slow: Cover the slow cooker and set it to low. Let it cook for 5 to 6 hours, or until the chicken is tender and easily shreds with a fork.

            Shred the Chicken: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the chili and stir well.
