Southwest Turkey Taco Skillet

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 (14.5 oz) can diced tomatoes with green chiles

2 tablespoons taco seasoning (store-bought or homemade)

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Optional toppings: sour cream, avocado, lime wedges, and sliced jalapeños

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for 2-3 minutes until it becomes translucent.

    Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

      Sauté Vegetables: Stir in the minced garlic and diced red bell pepper. Cook for another 2-3 minutes until the pepper softens.

        Combine Ingredients: Add the black beans, corn, diced tomatoes with green chiles (including the juice), taco seasoning, smoked paprika, and cumin to the skillet. Stir well to combine all ingredients.

          Simmer: Bring the mixture to a gentle simmer and let it cook for about 5 minutes, stirring occasionally. Taste and season with salt and pepper as desired.

            Cheese it Up: Sprinkle the shredded cheddar cheese on top of the turkey taco mixture. Cover the skillet with a lid and let it sit for another 2-3 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from heat and garnish with fresh cilantro. Serve hot with optional toppings such as sour cream, avocado, lime wedges, and sliced jalapeños.
