Spicy BBQ Pulled Chicken Flatbreads

1 pound boneless, skinless chicken thighs

1 cup BBQ sauce (spicy or regular, depending on your heat preference)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

4 flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1 cup corn (fresh, frozen, or canned)

1 cup fresh cilantro, chopped

Cook the Chicken: In a slow cooker or Instant Pot, combine the chicken thighs with BBQ sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours. For the Instant Pot, seal the lid and cook on high pressure for 10 minutes followed by a natural release.

    Shred the Chicken: Once cooked, transfer the chicken to a cutting board and shred it using two forks. Mix the shredded chicken with the remaining BBQ sauce in the slow cooker or pot.

      Prepare the Flatbreads: Preheat your oven to 425°F (220°C). Place the flatbreads on a baking sheet lined with parchment paper. If you prefer a crispy base, lightly brush the flatbreads with olive oil.
