1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for GF option)

1 cup water

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to your spice preference)

1/2 tsp salt

1/2 tsp pepper

1 cup buffalo sauce (store-bought or homemade)

2 tbsp olive oil

Optional: celery sticks and ranch dressing for serving

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper.

    Make the Batter: In a mixing bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper until smooth and free of lumps.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are fully coated. Allow any excess batter to drip off before placing them on the prepared baking sheet.

        Bake the Cauliflower: Arrange the batter-coated florets in a single layer on the baking sheet. Bake in the preheated oven for 25-30 minutes or until they are golden brown and crispy, flipping halfway through for even cooking.

          Prepare the Buffalo Sauce: While the cauliflower is baking, mix together the buffalo sauce and olive oil in a small saucepan over low heat, just until warmed. This helps to slightly mellow the sauce and blend the flavors.
