Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust to taste)

Salt to taste

Black pepper to taste

Optional: Fresh chopped parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Chickpeas: In a colander, thoroughly drain and rinse the chickpeas under cold water. Pat them dry using a clean kitchen towel or paper towels. Removing excess moisture is key for achieving that perfect crunch.

Seasoning Mixture: In a large mixing bowl, combine the olive oil, Cajun seasoning, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Whisk together until well blended.

Coat the Chickpeas: Add the dry chickpeas to the bowl and toss them to make sure they're evenly coated with the seasoning mixture. Ensure all chickpeas are well covered for maximum flavor.

Roasting: Spread the seasoned chickpeas out in a single layer on a baking sheet lined with parchment paper for easy cleanup. Make sure they have enough space between them for even roasting.

Bake: Roast in the preheated oven for 25-30 minutes, shaking the pan every 10 minutes, until the chickpeas are golden brown and crispy.

Cool and Serve: Once roasted, let the chickpeas cool for a few minutes on the baking sheet. They will continue to crisp up as they cool. Optional: Sprinkle with fresh chopped parsley for a pop of color and additional flavor.

Enjoy: Serve as a spicy snack, salad topping, or a crunchy ingredient in your favorite dishes. Store any leftovers in an airtight container at room temperature for up to 4 days.
