Spicy Chipotle Chicken Tacos

1 lb boneless, skinless chicken thighs

2 tablespoons chipotle in adobo sauce (plus 1 teaspoon adobo sauce)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: crumbled feta or cotija cheese for topping

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the chipotle in adobo sauce, olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well until the marinade is smooth.

    Marinate the Chicken: Add the chicken thighs to the bowl with the marinade, ensuring they are fully coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard the excess. Grill or sear the chicken thighs for about 5-7 minutes per side, or until cooked through and reaching an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes.

        Slice the Chicken: After resting, slice the chicken into bite-sized pieces.

          Warm the Tortillas: In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, until pliable and slightly toasted.

            Assemble the Tacos: Take a warmed tortilla and add a generous amount of sliced spicy chicken. Top with shredded red cabbage, avocado slices, and chopped cilantro. Add crumbled feta or cotija cheese if desired.

              Serve: Squeeze fresh lime juice over the top of the tacos for a zesty finish. Serve immediately with lime wedges on the side.
