Spicy Peanut Noodle Mason Jar Salad

2-3 tablespoons warm water (to thin, as needed)

1 clove garlic, minced

1 teaspoon grated fresh ginger

Pinch of red pepper flakes (adjust to taste)

For the Salad:

8 ounces cooked spaghetti or rice noodles (cooled)

1 cup shredded carrots

1 cup sliced red bell pepper

1 cup cucumber, julienned

1 cup red cabbage, shredded

1/2 cup green onions, sliced

1/4 cup chopped fresh cilantro

1/4 cup chopped roasted peanuts (for garnish)

Instructions
 

Make the Peanut Sauce:

    - In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, garlic, ginger, and red pepper flakes until smooth.

      - Gradually add warm water, one tablespoon at a time, until the sauce reaches your desired consistency. Taste and adjust seasoning if needed.

        Prepare the Salad Layers:

          - In clean, dry mason jars, start by layering your ingredients.

            - Pour about 2-3 tablespoons of the peanut sauce at the bottom of each jar.

              - Next, add the crowd-pleasing crunchy veggies and noodles. Start with carrots, followed by red bell pepper, cucumber, and red cabbage.
