Spinach Mushroom Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup mushrooms, finely chopped (button or cremini)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the minced garlic and chopped mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and moisture is evaporated.

        Add Spinach: Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and let the mixture cool slightly.

          Combine Filling Ingredients: In a large mixing bowl, combine the sautéed mushroom and spinach mixture with the ricotta cheese, half of the mozzarella, Parmesan cheese, egg, onion powder, oregano, salt, and pepper. Stir well until everything is fully combined.

            Stuff the Shells: Spread a thin layer of marinara sauce (about 1/2 cup) on the bottom of a 9x13 inch baking dish. Using a spoon, carefully stuff each cooked jumbo shell with the spinach and mushroom filling. Place the stuffed shells in the baking dish.

              Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure to cover them evenly. Sprinkle the remaining mozzarella cheese on top.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Once out of the oven, allow the stuffed shells to cool for a few minutes. Garnish with fresh basil before serving. Enjoy!
