Sticky Glazed Chicken and Rice Meatballs

For the Chicken Meatballs:

1 lb ground chicken

1 cup cooked jasmine rice

1/4 cup breadcrumbs

1/4 cup finely chopped green onions

1 clove garlic, minced

1 tsp ginger, freshly grated

1 tsp soy sauce

1/2 tsp salt

1/2 tsp black pepper

1 egg, lightly beaten

For the Sticky Glaze:

1/4 cup honey

1/4 cup soy sauce

2 tbsp rice vinegar

1 tbsp sriracha (adjust for spice level)

2 cloves garlic, minced

1 tsp sesame oil

1 tsp cornstarch mixed with 2 tbsp water (for thickening)

Garnish:

Sesame seeds

Sliced green onions

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground chicken, cooked jasmine rice, breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, salt, pepper, and the beaten egg.

      - Mix everything gently until just combined, being careful not to overmix.

        Form the Meatballs:

          - Using your hands, shape the mixture into meatballs about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

            Cook the Meatballs:

              - Preheat your oven to 400°F (200°C).

                - Bake the meatballs for 20-25 minutes, or until cooked through and browned on the outside.

                  Make the Sticky Glaze:

                    - While the meatballs are baking, combine honey, soy sauce, rice vinegar, sriracha, minced garlic, and sesame oil in a small saucepan.

                      - Heat over medium heat until the mixture begins to simmer, then reduce the heat to low.

                        - Stir in the cornstarch mixture and continue cooking for a few minutes until the glaze thickens slightly.

                          Glaze the Meatballs:

                            - Once the meatballs are cooked, transfer them to a large mixing bowl and pour the sticky glaze over them.
