Sticky Orange Ginger Chicken Wraps

1 lb (450g) boneless, skinless chicken thighs

1/4 cup soy sauce

1/4 cup fresh orange juice

Zest of 1 orange

2 tbsp honey

1 tbsp ginger, grated

2 cloves garlic, minced

1 tbsp rice vinegar

1 tsp sesame oil

1/2 tsp red pepper flakes (optional)

4 large whole wheat or spinach wraps

1 cup shredded carrots

1 cup baby spinach or mixed salad greens

1/4 cup chopped green onions

Sesame seeds for garnish

Marinate the Chicken: In a large bowl, whisk together soy sauce, orange juice, orange zest, honey, ginger, garlic, rice vinegar, sesame oil, and red pepper flakes. Add the chicken thighs and ensure they are well-coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off (keep the marinade). Cook the chicken for about 5-7 minutes on each side or until it is fully cooked and caramelized. Remove from heat and let it rest for a few minutes.

      Make the Sauce: While the chicken is resting, pour the leftover marinade into a small saucepan. Bring it to a simmer over medium heat and cook for about 5-7 minutes or until it thickens slightly to a glaze-like consistency. Remove from heat.

        Slice the Chicken: Once the chicken has rested, slice it into strips.

          Assemble the Wraps: Lay out the wraps on a clean surface. Begin by layering a handful of spinach or mixed greens in the center of each wrap, followed by shredded carrots and sliced chicken. Drizzle a spoonful of the sticky sauce over the chicken and sprinkle with chopped green onions.

            Wrap it Up: Fold in the sides of the wrap, then roll from the bottom up to tightly wrap the fillings. You can secure with a toothpick if needed.
