2 cups fresh strawberries, hulled and sliced

2 cups fresh rhubarb, chopped into 1-inch pieces

1 cup granulated sugar (adjust based on tartness)

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup chopped nuts (optional, such as pecans or walnuts)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Filling: In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice. Gently toss to coat the fruits evenly. Pour the filling into a greased 9x13 inch baking dish and spread it out evenly.

      Make Crisp Topping: In another bowl, combine the rolled oats, flour, brown sugar, ground cinnamon, salt, and chopped nuts (if using). Stir until well-mixed.
