Stuffed Zucchini Peppers

Ingredients
  

4 medium zucchinis

2 bell peppers (any color)

1 cup cooked quinoa

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 tsp ground cumin

1 tsp chili powder

½ tsp garlic powder

½ tsp onion powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish

Olive oil for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini and Peppers:

      - Cut the zucchinis in half lengthwise and scoop out the insides using a spoon to create boats. Set aside the zucchini flesh.

        - Cut the tops off the bell peppers and remove the seeds and membranes.

          Make the Filling:

            - In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, scooped zucchini flesh, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well to combine all ingredients.

              Stuff the Zucchini and Peppers:

                - Spoon the filling evenly into the prepared zucchini boats and bell peppers, packing it lightly. Top with shredded cheese.

                  Bake:

                    - Place the stuffed zucchini and bell peppers in a baking dish. Drizzle with a little olive oil and cover with aluminum foil.

                      - Bake in the preheated oven for about 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                        Garnish and Serve:

                          - Once done, take them out of the oven and let them cool slightly. Garnish with fresh cilantro or parsley before serving.
