Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup almond butter (or other nut butter)

1/2 cup sliced almonds

1/4 cup dried cranberries (or raisins)

1/4 cup shredded coconut (unsweetened)

1/2 tsp cinnamon

1/4 tsp sea salt

1 tsp vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, sliced almonds, dried cranberries, shredded coconut, cinnamon, and sea salt. Mix well until all dry ingredients are evenly distributed.

Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until fully combined. The mixture should be thick and sticky.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish and use a spatula or your hands to press it down evenly into the corners and flatten the surface.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown.

Cool and Cut: Remove from the oven and allow to cool in the pan for about 10 minutes. Using the parchment paper, lift the bar mixture out of the dish and let it cool on a cutting board. Once completely cooled, cut into squares or bars.

Store: Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
