1 pound baby carrots (or sliced regular carrots)

1/4 cup unsalted butter

1/4 cup brown sugar, packed

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prep the Carrots: If using regular carrots, peel and slice them into equal-sized pieces, about 1/4-inch thick. For baby carrots, rinse them under cold water and set aside.

    Cook the Carrots: In a large pot, bring water to a boil and add a pinch of salt. Add the carrots and cook for about 5-7 minutes, until they are just tender but still slightly crisp. Drain and set aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Once melted, add the brown sugar, honey, salt, black pepper, cinnamon, and nutmeg (if using). Stir the mixture until the sugar has dissolved and the glaze begins to bubble.
