1 cup finely grated carrots (about 2 medium carrots)

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup crushed pineapples, drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup cream cheese frosting (for dipping or drizzling)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray with non-stick cooking spray.

    Prepare the Carrots: Finely grate the carrots and set them aside. If there’s excess moisture, pat them dry with a paper towel to prevent the bites from becoming too wet.

      Mix Dry Ingredients: In a bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Ensure everything is well combined.

        Combine Wet Ingredients: In another bowl, mix the applesauce, vegetable oil, eggs, and vanilla extract until smooth. Stir in the finely grated carrots and crushed pineapples.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you’re using nuts, fold them in gently at this stage.

            Fill the Muffin Tin: Spoon the batter into each cavity of the mini muffin tin, filling them about 3/4 full.

              Bake: Place in the preheated oven and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. The bites should be lightly golden on top.

                Cool: Once baked, allow them to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
