4 salmon fillets (6-8 oz each)

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tablespoon olive oil

Salt and pepper to taste

Chopped green onions (for garnish)

Sesame seeds (for garnish)

For the Fluffy Coconut Rice:

1 cup jasmine rice

1 1/2 cups coconut milk

1/2 cup water

1 tablespoon sugar

1/2 teaspoon salt

Fresh lime wedges (for serving)

For the Sweet Chili Glazed Salmon:

    In a mixing bowl, whisk together the sweet chili sauce, soy sauce, honey, garlic powder, and ginger powder until well combined.

      Season the salmon fillets with salt and pepper on both sides.

        Heat olive oil in a large skillet over medium-high heat.

          Add the salmon fillets to the skillet, skin side down if applicable. Sear for about 4 minutes until the salmon is golden.

            Flip the fillets carefully and pour the sweet chili glaze over the top. Cook for another 3-4 minutes or until the salmon is cooked through and the glaze has thickened slightly.

              Remove from heat and let the salmon rest for a minute before serving.

                For the Fluffy Coconut Rice:

                  Rinse the jasmine rice under cold water until the water runs clear. This helps to remove excess starch.

                    In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt.

                      Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid.

                        Cook for about 15 minutes or until all the liquid is absorbed and the rice is tender.

                          Remove from heat and let sit, covered, for an additional 5 minutes to steam. Fluff the rice with a fork before serving.

                            To Serve:

                              Place a generous scoop of coconut rice on each plate.
