1 cup water

2 tablespoons granulated sugar

1/2 teaspoon salt

1/2 cup unsalted butter

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1/2 cup granulated sugar (for coating)

2 teaspoons ground cinnamon

Prepare the Dough: In a medium saucepan, combine water, granulated sugar, salt, and butter. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until the mixture forms a ball.

    Add Eggs and Vanilla: Allow the dough to cool slightly, then beat in eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the dough is smooth and glossy.

      Heat the Oil: In a deep frying pan or pot, pour in oil to a depth of about 2 inches. Heat the oil to 350°F (175°C) over medium heat.

        Prepare Cinnamon Sugar Mixture: In a separate bowl, combine the 1/2 cup granulated sugar with the ground cinnamon. Set aside.

          Pipe the Churros: Transfer the churro dough into a piping bag fitted with a large star tip. Once the oil is hot, carefully pipe 4-6 inch long strips of dough into the oil, being cautious to avoid crowding the pan.

            Fry Until Golden Brown: Fry the churros for about 2-3 minutes on each side, or until they are golden brown and crispy. Use tongs to flip them as needed.

              Drain and Coat: Remove the churros from the oil and let them drain on a paper towel-lined plate for a few moments. While they’re still warm, toss them in the cinnamon-sugar mixture until evenly coated.
