1 cup unsweetened shredded coconut, plus extra for rolling

1 cup almond flour

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup mini dark chocolate chips (optional)

1/4 teaspoon almond extract (optional for extra flavor)

Instructions
 

In a large mixing bowl, combine the shredded coconut, almond flour, almond butter, maple syrup, vanilla extract, and sea salt. If you're adding almond extract for extra nuttiness, mix that in as well.

    Stir the mixture until all the ingredients are well incorporated and form a sticky dough. Make sure there are no dry spots and that everything is fully combined.

      If using, gently fold in the mini dark chocolate chips for a delightful chocolatey surprise in each bite.

        Once the mixture is ready, use your hands to scoop out about 1 tablespoon of dough and roll it into a smooth ball. Repeat the process until all the dough is shaped into balls.
