Ingredients
  

1 cup Medjool dates (pitted)

1 cup unsweetened shredded coconut

1/2 cup raw almonds (or any nuts of choice)

1/4 cup almond butter (or peanut butter)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional toppings: cacao nibs, chopped pistachios, or more shredded coconut

Instructions
 

Prepare the Dates: If your Medjool dates are not soft, soak them in warm water for about 10 minutes to soften. Then drain and pat dry.

    Blend Ingredients: In a food processor, combine the softened dates, raw almonds, almond butter, vanilla extract, and sea salt. Blend until the mixture is sticky and well incorporated. You might need to scrape down the sides a couple of times during the process.

      Form the Bites: Once the mixture is well combined, take a tablespoon of the mixture and roll it into small balls (about the size of a golf ball). If the mixture is too sticky, wet your hands slightly to make rolling easier.

        Coat the Bites (Optional): In a shallow dish, spread the shredded coconut, and roll each ball in the coconut until fully coated. If you prefer, you can also roll them in cacao nibs or chopped pistachios for an extra crunch.

          Chill: Place the rolled balls on a parchment-lined plate or tray and chill in the refrigerator for at least 30 minutes to firm up.
