2 ripe avocados

1 cup fresh sweet corn kernels (or canned/frozen if necessary)

1 small red onion, finely chopped

1 medium jalapeño, deseeded and minced (optional for heat)

1 lime, juiced

2 tablespoons fresh cilantro, chopped

Salt and black pepper, to taste

4 slices of sourdough or whole-grain bread

Olive oil, for drizzling

Crumbled feta cheese (optional)

Red pepper flakes (optional, for garnish)

Prepare the Corn: If using fresh corn, bring a pot of water to boil. Add the corn kernels and cook for about 3-5 minutes until tender. Drain and let cool. If using canned or frozen corn, skip this step.

    Mash the Avocados: In a medium bowl, cut the avocados in half, remove the pit, and scoop the flesh into the bowl. Using a fork, mash the avocados to your desired texture (smooth or chunky) and add lime juice to prevent browning.
