1 bag of tortilla chips (16 oz)

1 can (15 oz) black beans, rinsed and drained

1 cup sweet corn (canned or frozen)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium red bell pepper, diced

1 medium jalapeño, seeded and diced (optional for heat)

1/2 cup red onion, finely chopped

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup sour cream or Greek yogurt

1/4 cup salsa (mild or hot, based on preference)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and black pepper to taste

Lime wedges for serving

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the beans and corn mix: In a medium mixing bowl, combine the black beans, sweet corn, diced red bell pepper, jalapeño (if using), red onion, olive oil, ground cumin, chili powder, salt, and black pepper. Mix thoroughly to combine all the flavors.

      Layer the nachos: Spread half of the tortilla chips in a large baking dish or a lined oven tray. Sprinkle half of the mixed cheese (both cheddar and Monterey Jack) over the chips. Spoon half of the bean and corn mixture over this.

        Add more layers: Add the remaining tortilla chips on top of the mixture. Then, sprinkle the rest of the cheese evenly over the top. Spoon the rest of the bean and corn mix on top of the second layer of chips.

          Bake the nachos: Place the baking dish in the preheated oven and bake for about 10-15 minutes, or until the cheese is bubbly and melted.
