Tuna Lettuce Wraps with Strawberry Glaze

1 can (5 oz) tuna in water, drained

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon chopped fresh dill

1/2 teaspoon garlic powder

Salt and pepper to taste

8 large romaine or butter lettuce leaves

1/4 cup diced cucumber

1/4 cup diced bell pepper (red or yellow)

1/4 cup shredded carrots

1/4 cup strawberries, hulled and sliced

1 tablespoon honey

1 teaspoon balsamic vinegar

Instructions
 

Prepare the Strawberry Glaze: In a small blender or food processor, combine the sliced strawberries, honey, and balsamic vinegar. Blend until smooth. Set aside to let the flavors meld while you prepare the other ingredients.

    Mix the Tuna Filling: In a medium bowl, combine the drained tuna, Greek yogurt, Dijon mustard, lemon juice, chopped dill, garlic powder, salt, and pepper. Mix well until the ingredients are fully incorporated and creamy.

      Prep the Lettuce Leaves: Carefully wash and dry the lettuce leaves. Set aside on a clean plate.

        Assemble the Wraps: Take a lettuce leaf and fill the center with a generous scoop of the tuna mixture. Top with diced cucumber, bell pepper, and shredded carrots.

          Drizzle with Strawberry Glaze: Spoon a little of the strawberry glaze over the top of the filled wrap for a sweet and tangy kick.

            Wrap and Serve: Carefully fold in the sides of the lettuce leaf and roll it up to enclose the filling. Repeat with the remaining ingredients. Serve with additional strawberry glaze on the side for dipping.
