2 large cucumbers

1 can (5 oz) of tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 tablespoon Dijon mustard

1 celery stalk, finely chopped

1/4 cup red bell pepper, finely diced

1/4 red onion, finely diced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Optional: Lettuce leaves for lining the cucumber boats, cherry tomatoes for garnish

Instructions
 

Prepare the Cucumbers: Cut the cucumbers in half lengthwise. Use a spoon to scoop out the seeds and some of the flesh to create a hollow “boat” for the tuna salad. Set aside.

    Make the Tuna Salad: In a medium mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, chopped celery, red bell pepper, red onion, and fresh dill. Mix well until all ingredients are fully incorporated.

      Season the Mixture: Add salt and pepper to taste, adjusting flavors as preferred. For an extra kick, a dash of lemon juice can be added.

        Assemble the Boats: If desired, line the inside of each cucumber half with a small piece of lettuce. Spoon the tuna salad mixture evenly into each cucumber boat, pressing gently to pack it in.

          Garnish: Top each boat with a cherry tomato or extra dill, if desired. This adds a pop of color and extra flavor.

            Serve: Arrange the tuna salad cucumber boats on a platter and enjoy fresh! They can be served immediately or chilled in the refrigerator for 30 minutes for a refreshing treat.
