Turkey Lettuce Wraps with Pineapple Glaze

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup bell peppers, diced (any color)

1/2 cup carrots, grated

1/2 cup fresh pineapple, finely chopped

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon fresh ginger, minced

1 teaspoon sesame oil

Fresh cilantro, chopped (for garnish)

1 head of butter or romaine lettuce (for wrapping)

Chopped peanuts (optional, for garnish)

Instructions
 

Prepare the Pineapple Glaze: In a small saucepan over medium heat, combine the chopped pineapple, soy sauce, hoisin sauce, rice vinegar, and minced ginger. Stir well and bring to a gentle simmer. Let it cook for about 5-7 minutes until slightly thickened. Remove from heat and set aside.

    Cook the Turkey Filling: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until translucent, about 3-4 minutes.

      Add Garlic and Vegetables: Stir in the minced garlic and cook for an additional minute until fragrant. Then add the diced bell peppers and grated carrots, cooking until softened, about 3-4 minutes.

        Mix in Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook for about 6-8 minutes until fully browned and cooked through.

          Season the Filling: Pour the previously prepared pineapple glaze over the cooked turkey mixture and stir to combine well. Allow it to cook together for another 2-3 minutes, incorporating the flavors.
