Turkey Skewers with Mango Salsa

For the Turkey Skewers:

1 lb turkey breast, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional, for heat)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Marinate the turkey: In a large bowl, combine olive oil, soy sauce, honey, minced garlic, cumin, paprika, salt, and black pepper. Add the turkey cubes to the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for more flavor).

    Prepare the mango salsa: In a separate bowl, mix the diced mango, red onion, red bell pepper, jalapeño, lime juice, and cilantro. Season with salt and pepper to taste. Set aside to allow the flavors to meld.

      Preheat the grill: Preheat your grill to medium-high heat. If you are using a grill pan, preheat it on the stove over medium-high heat.

        Assemble the skewers: Once marinated, thread the turkey cubes onto the skewers, leaving a little space between each piece for even cooking.

          Grill the skewers: Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the turkey is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
