Vietnamese Spring Rolls with Peanut Dip

Ingredients
  

For the Spring Rolls:

8 rice paper wrappers

1 cup vermicelli noodles (uncooked)

1 cup cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian option)

1 cup fresh mint leaves

1 cup fresh basil leaves

1 cup cilantro leaves

1 cup shredded carrots

1 cup cucumber, julienned

1 cup bean sprouts

Leafy lettuce (such as butter or romaine)

For the Peanut Dip:

1/2 cup peanut butter (smooth or chunky based on preference)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust for spice level)

1-3 tablespoons warm water (to achieve desired consistency)

Chopped peanuts (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Vermicelli Noodles: Cook the vermicelli noodles according to package instructions. Once cooked, drain and rinse under cold water. Set aside.

    Prepare the Ingredients: Make sure all your vegetables and herbs are washed and ready. Slice the shrimp (or tofu) and prepare the carrots, cucumber, and vegetables.

      Make the Peanut Dip: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sriracha, and warm water until smooth. Adjust the amount of water for desired thickness. Garnish with chopped peanuts and fresh cilantro. Set aside.

        Assemble the Spring Rolls:

          - Fill a large shallow dish or a wide pan with warm water.

            - Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes pliable.

              - Place the softened wrapper on a clean, flat surface.

                - In the center of the wrapper, layer a few mint leaves, basil leaves, and cilantro leaves.

                  - Add a small handful of vermicelli noodles, shrimp (or tofu), carrots, cucumber, and bean sprouts.

                    - Place a small piece of leafy lettuce on top for extra crunch.

                      Roll the Spring Rolls:

                        - Fold the bottom of the rice paper up over the filling.

                          - Fold the sides of the wrapper inwards, then roll tightly from the bottom to the top. Make sure to keep the filling secure as you roll.

                            - Repeat this process with the remaining wrappers and filling.

                              Serve the Spring Rolls: Arrange the spring rolls on a platter. Serve with the peanut dip on the side.
