1 can (15 oz) chickpeas, rinsed and drained

1/4 cup plain Greek yogurt (or vegan alternative)

2 tablespoons mayonnaise (or vegan mayo)

Juice and zest of 1 large lemon

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup finely chopped red onion

2 tablespoons fresh parsley, chopped

4 slices whole grain bread (or your preferred type)

Lettuce leaves, for serving

Mash the Chickpeas: In a large mixing bowl, use a fork or potato masher to coarsely mash the rinsed chickpeas, leaving some chunks for texture.

    Mix the Dressing: In a separate bowl, combine the Greek yogurt, mayonnaise, lemon juice, lemon zest, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until smooth.

      Combine Ingredients: Pour the dressing over the mashed chickpeas. Add diced celery, red bell pepper, red onion, and fresh parsley to the bowl. Stir gently until everything is well combined.

        Taste and Adjust: Taste the chickpea mixture and adjust seasoning if needed, adding extra salt, pepper, or lemon juice for more zing according to your preference.
