Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1 cup diced tomatoes (fresh or canned)

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 head of romaine or butter lettuce, leaves separated

Your choice of toppings: diced avocado, shredded cheese, sour cream, salsa, or sliced jalapeños

Instructions

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until it becomes translucent.

Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes. Make sure to stir occasionally to ensure even cooking.

Add Garlic and Spices: Once the turkey is browned, add minced garlic, chili powder, cumin, smoked paprika, onion powder, garlic powder, cayenne pepper (if using), and a pinch of salt and pepper. Mix well to incorporate all the spices and cook for another 2 minutes, allowing the flavors to meld.

Mix in Veggies: Add the diced tomatoes and corn to the skillet. Stir to combine and cook for an additional 3-4 minutes, until heated through. Remove from heat.

Finish with Fresh Ingredients: Stir in the chopped cilantro and lime juice for a refreshing touch. Adjust seasoning with more salt and pepper to taste.

Assemble the Wraps: To serve, take a romaine or butter lettuce leaf and spoon a generous amount of the turkey mixture into the center. Top with your favorite toppings such as diced avocado, shredded cheese, sour cream, salsa, or sliced jalapeños.

Enjoy: Roll up the lettuce leaf and enjoy your zesty taco without the guilt of a regular taco shell!
