Zucchini & Corn Fritters

2 medium zucchinis, grated

1 cup fresh corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/4 cup milk (or plant-based milk)

2 green onions, finely chopped

1 clove garlic, minced

1 tsp baking powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

Olive oil, for frying

Fresh herbs (like cilantro or parsley), for garnish

Optional: sour cream or yogurt, for serving

Instructions
 

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This will help the fritters be crispier.

    Combine Dry Ingredients: In a large bowl, mix together the flour, cornmeal, baking powder, cumin, smoked paprika, salt, and pepper.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, and minced garlic. Once combined, add the drained zucchini and corn kernels, followed by the green onions.

        Combine Mixtures: Pour the wet mixture into the dry ingredient bowl. Stir until just combined; do not overmix. The batter should be thick but still spreadable.

          Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat.

            Fry the Fritters: Once the oil is hot, drop about 1/4 cup of batter into the skillet for each fritter. Flatten slightly with the back of a spatula. Fry for 3-4 minutes on each side or until golden brown and crisp.

              Drain and Serve: Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Continue frying until all the batter is used, adding more oil as needed.
