Zucchini Noodle Greek Salad

4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Zucchini Noodles: Using a spiralizer, turn the zucchinis into noodles (zoodles). If you don't have a spiralizer, you can use a vegetable peeler or mandoline to create thin ribbons. Place the zoodles in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, pat them dry with paper towels.

    Chop the Vegetables: While the zoodles are draining, wash and chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place all the chopped vegetables in a large mixing bowl.

      Add the Olives and Feta: Stir in the Kalamata olives and crumbled feta cheese into the mixing bowl with the vegetables.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning according to your taste.

          Combine Everything: Add the drained zoodles to the mixing bowl with the vegetables. Pour the dressing over all the ingredients and toss gently to combine everything well.

            Garnish and Chill: Sprinkle the chopped fresh parsley over the top. If desired, you can let the salad chill in the fridge for about 15-20 minutes before serving to allow the flavors to meld together.
