2 medium zucchinis

1 cup marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (or any toppings of choice)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional for a spicy kick)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them into 1/2-inch thick slices, discarding the ends. Place the slices on a paper towel and sprinkle lightly with salt. Let them sit for about 10 minutes to draw out excess moisture.

      Dry the Zucchini: Pat the zucchini slices dry with another paper towel to remove the moisture released by the salt.

        Season the Zucchini: In a small bowl, mix the olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush or drizzle this mixture over one side of each zucchini slice.

          Arrange on Baking Sheet: Lay the zucchini slices in a single layer on a parchment-lined baking sheet, seasoned side up.

            Pre-Bake the Zucchini: Bake the zucchini slices in the preheated oven for 10 minutes. This helps to firm them up and create a sturdy base for the toppings.

              Add Marinara and Toppings: Remove the zucchini from the oven. Spoon a small amount (about a teaspoon) of marinara sauce onto each slice. Then, sprinkle with shredded mozzarella cheese and add your chosen toppings (pepperoni, vegetables, etc.).

                Bake Again: Return the baking sheet to the oven and bake for an additional 10-12 minutes or until the cheese is melted and bubbly.
