4 medium zucchinis

1 cup marinara sauce (or your favorite pizza sauce)

1 ½ cups shredded mozzarella cheese

½ cup pepperoni slices (or your choice of protein, like cooked sausage or mushrooms)

½ cup diced green bell pepper

½ cup diced onion

1 teaspoon Italian seasoning

¼ teaspoon garlic powder

Fresh basil leaves for garnish

Olive oil

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Slice each zucchini in half lengthwise, then scoop out the seeds and some flesh using a spoon to create a boat. Leave about ¼ inch of zucchini flesh to help maintain structure. Lightly season the insides with salt and pepper.

      Sauté the Veggies: In a skillet over medium heat, add a drizzle of olive oil. Sauté the diced bell pepper and onion until softened, about 3-4 minutes. Season with Italian seasoning and garlic powder, stirring for another minute. Remove from heat.
