6 large eggs

1 cup fresh spinach, chopped

1 medium zucchini, grated

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/2 cup feta cheese, crumbled

1/4 cup milk (preferably whole)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

2 tablespoons olive oil or butter

Fresh herbs for garnish (such as basil or parsley)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large oven-proof skillet, heat the olive oil (or butter) over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and grated zucchini, and cook for another 2-3 minutes until the zucchini is slightly softened.

      Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Stir in the salt, black pepper, and red pepper flakes if using.

        Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, and crumbled feta until well combined.

          Combine Everything: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to distribute the spinach and zucchini evenly.

            Cook on Stovetop: Allow the frittata to cook on the stovetop for about 3-4 minutes, or until the edges begin to set.

              Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set and the top is lightly golden.

                Cool & Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before slicing. Serve warm or at room temperature.
