Ingredients

1 medium zucchini, grated

1 cup plain Greek yogurt (low-fat or full-fat)

1 clove garlic, minced

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil

Salt, to taste

Pepper, to taste

Optional: ΒΌ teaspoon ground cumin for an extra flavor kick

Instructions

Prepare the Zucchini: Start by grating the zucchini using a box grater or food processor. Once grated, place the zucchini in a clean kitchen towel or cheesecloth, twist it, and squeeze out excess moisture. This step is crucial to avoid a watery tzatziki.

Combine Ingredients: In a mixing bowl, add the drained grated zucchini, Greek yogurt, minced garlic, chopped dill, lemon juice, and olive oil.

Season: Sprinkle in salt and pepper to taste, and add the optional cumin if you're feeling adventurous. Stir well to combine all ingredients.

Taste & Adjust: After mixing, taste your tzatziki. Adjust the seasoning if necessary by adding more salt, pepper, or lemon juice as desired.

Chill: For the best flavor, cover the bowl with plastic wrap or transfer the tzatziki to an airtight jar and refrigerate for at least 30 minutes before serving. This helps the flavors meld beautifully.

Serve: Serve chilled as a dip with pita bread, fresh vegetables, or use it as a sauce for grilled meats and falafel. Enjoy!
